WHAT IS SPECIALTY COFFEE?

Specialty Coffee refers to the whole process from crop to cup using single origin coffee. It refers to the way the coffee is roasted and how it is extracted.

The Specialty Coffee Association of America (SCAA) states that coffee which scores an 80 or above on a 100-point quality scale is deemed a “Specialty Coffee”.

In order to achieve this quality standard, all involved in the value chain from crop-to-cup must work in harmony, maintaining a keen focus on excellence from start to finish.

Specialty Coffee is distinct; Celebrated for its unique flavors, specific origins, and the absence of defects.

We hold strict quality standards in order to ensure excellence in our specialty coffee, utilizing only the most reliable suppliers. We also require any partner’s Roastmaster to be a member of the Roasters Guild of SCAA.

Each blend is carefully chosen based on scores of characteristics determined from decades of testing, sampling and perfecting the roasting process.

We craft custom and proprietary blends with defined characteristics to create our own distinct and unique tastes that set us apart from the rest.

All of our coffee beans are sourced from growers who participate in certification programs which focus on enhancing social and economic empowerment in their communities.

HOW WE ACHIEVE THE PERFECT SPECIALTY BLEND

Coffee is an art learned over many years. The entire process not only requires technical skill, but artistic talents and knowledge which can only be achieved through time and experience.

THE BEST COFFEE BEANS ARE SOURCED FROM ALL OVER THE WORLD

The varied geography from which we import our coffee beans gives us a wide range of flavors and aromas: South and Central America, Indonesia, The Pacific Islands, Africa, & Arabia.

The harvesting, processing, climatic growing conditions, moisture content, and other factors contribute to each coffee’s individual characteristics.

CUPPING

Prior to accepting coffee for shipment to our warehouse, we “cup” (test-sample) each and every one of our primary coffees to determine its quality characteristics: Aroma, Body, Acidity, Flavor, and Finish.

ROASTING

Each coffee has its own profile; It should be treated differently during the roasting process to best maintain its characteristics. We want our customers to taste the coffee, not just the roast.

We micro-roast our coffee in small, individually-controlled batches, producing only enough to meet our individual needs.

BLENDING

After the roasting process, the coffee is blended. The roasted coffee’s profile and characteristic will contribute to its “Blend Type”.
